Three Tips for Getting to Know and Love Wine


Although a huge portion of the world's population drinks wine, many of us have no idea what's actually inside the bottle in front of us. But the fact is that there are over ten thousand different grape varieties that can be made into wine, and dozens of countries producing wines of every shape and size.

... and color.

Wines, you see, don't just come in red and white. They also come in sorted shades of pink and even orange and brown (but we're getting way ahead of ourselves here).

The fact is that the world of wine is unknown and misunderstood by the typical wine consumer.

So what's an aspiring wine lover to do when faced with mountains of drinking options in the wine shop?

Here's a suggestion: don't stay in your comfort zone. Move beyond the 1980s, and stop ordering a glass of generic Chardonnay or Cabernet. Not that there is anything wrong with either of those grape varieties. But if you'd like to find a happy medium between the blissfully ignorant wine consumer, and the know-it-all wine snob, then here's what you need to do:

Know some basic rules

It's commonly understood that white wines go with fish and white meat, and that red wines go with red meat. But that's only the beginning of the story. Wines which are made to go alongside food have a tremendous range of capabilities. In fact, it's possible to find terrific pairings that totally go against the conventional wisdom and old school rules. So instead of pairing based on color, try thinking about dominant flavors in dishes or the weight and texture of a particular dish... and then find wines that work well in tandem with those traits.

What does that mean? Well how about pairing an earthy, soulful salmon and mushroom dish with and earthy, soulful Pinot Noir? Blasphemy? Not in today's wine world.

Know it's okay not to know

Too many of us feel like we need to posture about our wine knowledge and wine experience. You see that sommelier heading toward the table and you start grasping for wine words you read in a magazine or attempt to impersonate a scene you saw in some movie.

Look, not everyone is expected to know about wine. And the sommelier isn't there to quiz you on your knowledge. They are there to help you make good decisions that fit your taste and budget. So do yourself a favor and humble up and ask a few questions if you need to.

Enjoy the experience

Wine doesn't need to be approached academically by most of us. So don't worry about studying up, and focus on enjoying the wine experience.

Take note of the characteristics you like and what things you don't like... and use that new knowledge to increase your future enjoyment by exploring more and more new wines that fit your preferences.

Your Guide to Indulge in 'Wining and Dining'


Even as grown-ups and frequenters to reputed fine-diners, we wouldn't quite agree, but most of us find ourselves stuck while holding that elaborate menu. Confused in sections of gourmet recipes half of which sound alien and those tongue twisting wine chardonnays, we often find ourselves too embarrassed to ask for details. Hence, either we limit ourselves to those well tried out dishes adding monotonicity to our platters or end up ordering disasters that does not suit your palette--both of which ruin the indulgence, well-earned, given to the handsome checks paid for wining and dining.

So, to ease this seemingly daunting task you thought you were stuck with, here is a guide to food and wine ordering.

Your order of food should always precede your choice of wine, as wine and food alter each others taste and effect, so, the combination matters. The acids of wine break down the fats and salt contents alter the bitterness of wine. Moreover, wine may only come in later at the time of main course, so you can enjoy your appetizers in the meantime. And choosing the right nibbles, appetizers and main course is no rocket science.

Food

• Trust your decision- If the sight or description of a particular thing makes you crave for it, you are ready to order and there is no point brooding over it much.

• Watch out for 'Special'- The 'special' or 'new from the chef's kitchen' dishes are usually new experiments that may or may not turn out well. So, choose it only if you are open and up for hit and trial method. If the price against it is too high, it's best to let the chef pay for his own experiments and settle for something a little less unconventional. However, if the ingredients are such that they are seasonal, then it's different, and you can go ahead as per your choice.

• While adventuring- while trying out a new cuisine or a particular ingredient, best is to order a smaller portion or something listed under appetizers. They are smaller, cheaper and easier to share.

• Be specific- Questions like is the tuna fresh, or if this dish tastes better than that will lead you nowhere. Don't shy away from inquiring about the specific flavours. Like if you want to ask whether a specific preparation is spicy or tangy or if the meat is cut above the loin or not, go ahead you have every right to do so.

• Go by the technique- Words like scrumptious, succulent, tender etc. are only for the pomp and show. Instead of fluffy description, rely upon words that describe actual cooking technique like steak or stir-fried. They would also help you balance the scale between healthy and tasty.

Wine

Now as for wine ordering, it shouldn't be a stressed-out situation. Trust your isomerism and instead of pretending, let her know if you are new to wine tasting. She will eventually figure out. Also, it will help her give better recommendations.

• Describe what you want- You don't have to hold a PHD in oenology to explain what you need. Just get familiar with their vocabulary which is fairly reasonable once you get used to it.

o Weight- Don't look confused by the word, it isn't used in the regular substance. Imagine if you would like something 'light-bodied' as in crisp or 'full-bodied' as in richer.

o Flavour- This one is simple. Just think if along with the tinge of alcoholic warmth, you want something infested with ripe fruit 'sweetness' or wooden barrel, earthy tone, etc.- 'savoury'.

o Texture- The acidic content adds the bite or tartness to your wine. If you want less of it, ask for something smooth.

So, with this, you are good to go. Just don't forget to enjoy the experience instead of getting caught up in the nuances.

Red Wine Has Many Health Benefits You Might Not Know About


Is red wine the fountain of youth or a powerful toxicant? Current research suggests that consuming the popular libation may be providing you with a little more than spells of bliss and tranquility.

For over two decades, research has suggested that moderate consumption of alcohol improves the cardiovascular system. Furthermore, some of these studies suggest that red wine, in particular, is most beneficial to your heart. It all started in 1992 when researchers at Harvard University concluded that moderate alcohol consumption stood as a "proven way to reduce coronary heart disease risk." The cardioprotective effect has been attributed to antioxidants, called flavonoids, found in the seeds and skin of grapes.

Does Wine Cure Cancer?

Nothing conclusive has been discovered, at least not yet. However, researchers at the University of California, at Davis tested the flavonoid concentration in a number of wines, concluding that Cabernet Sauvignon has the highest concentration, followed by Petit Syrah and Pinot Noir. Merlot, the wine drinker's most popular libation, came in a close fourth, but not by much.

A different study concluded that another antioxidant called resveratrol, also found in grape skin, could inhibit tumor growth in some cancers. Indications revealed that resveratrol could also regenerate dead nerve cells, which doctors believe could be helpful in the treatment of diseases such as Parkinson's and Alzheimer's.

Drink In Moderation

A four-ounce measurement constitutes a single serving. Studies show that men can experience health benefits by consuming two of these per day while women should stick to just one. The suggested measurement is based on many surveys taken over a two-decade span, designed to discover the maximum health benefits. That is not to say that you should start drinking red wine if you presently do not. In fact, drinking alcohol can be extremely dangerous for some individuals with certain health issues (e.g., liver cirrhosis, heart disease, pancreatitis, etc.).

Recommendations to consume alcohol are limited to individuals with a clean bill of health. It is clear that people with social and medical conditions degraded by alcohol should avoid drinking at all costs. In fact, those who suffer from a social or medical condition can only worsen their health when drinking, especially if you have congestive heart failure, hypertension, or suffer from depression.

What About Grape Juice and Non-Alcoholic Products?

Way back in 1997, researchers at the University of Wisconsin discovered that purple grape juice could reduce blood clotting. Another study added that non-alcoholic red wine has the same molecular profile as its alcoholic counterpart.

The debate continues whether moderate drinking of red wine, lifestyle choices or the way alcohol is consumed contributes most to these scientific studies. However, the evidence seems clear that healthy people who drink moderately and regularly (stressing moderation) enjoy many health benefits not found elsewhere.

Mankas Steakhouse is an Active Member of the Suisun Valley AVA

The Suisun Valley AVA, is an American Viticultural Area in Solano County, California, at the southern end of the Coast Range bordering the Napa Valley region. It was established as a wine appellation of origin on December 27, 1982.



Suisun Valley lies within the southern end of the Coast Range, between the Vaca Mountains and the Mt. George Range to the west, and ends at Suisun Bay to the south while to the north it starts at the Napa County line. It is approximately 3 miles (5 km) by 8 miles (13 km). It contains about 15,000 acres (61 km2 of which approximately 2,200 acres (9 km2) are planted with grapes.



Mankas Steakhouse is an active member of the Suisun Valley AVA. We shop weekly at the local Farmer's Markets to purchase and serve the freshest, local produce to our customers in our restaurant. Much of this produce is also organically grown.



We pour wines that have been rated some of the best in the region; including a wide selection from the Vezer Family Vineyard.

Mankas Steakhouse has Received Wine Spectator's Award of Excellence for the 3rd Year in a Row!



Wine Spectator's Restaurant Wine List Awards recognize restaurants whose wine lists offer interesting selections, are appropriate to their cuisine and appeal to a wide range of wine lovers.

To qualify for an award, the list must present complete, accurate wine information. It must include vintages and appellations for all selections, including wines available by the glass. Complete producer names and correct spellings are mandatory, while the overall presentation and appearance of the list is also taken into consideration. After meeting these basic requirements, lists are judged for one of their three awards.
